Chocolate Chip Banana Bread Pancakes

So sinfully delicious you would think you are having a dessert, but lucky for you (and me) it’s a healthy breakfast! I love banana bread in all forms- muffins, loaves, so why not pancakes? I of course had to add some chocolate chips to make these pancakes extra special!🙂

Chocolate Chip Banana Bread Pancakes

Recipe by: Amy Clevenger,

Serves: 2, makes 4-5 medium size pancakes

– 1/2 cup Old Fashioned Oats

– 1 scoop Vanilla Whey Protein ( I use About Time Protein use my 25% off code: FANTASTICALLYFIT to save)

– 1 tablespoon Unsweetened Vanilla Almond Milk

– 1/4 cup Unsweetened Apple Sauce

– 1 Whole Egg

– 1/4 teaspoon Butter Extract

– 1 teaspoon Baking Powder

– 1/4 teaspoon Cinnamon

– 1/8 teaspoon Nutmeg

– 2 tablespoons Enjoy Life Mini Semi Sweet Chocolate Chips (these are dairy, nut and soy free)

– 1 Banana, Sliced

– Optional: Walnuts


Blend oats in a food processor or blender until fine like flour. Then add in all the other ingredients EXCEPT the chocolate chips, banana and walnuts, and blend until smooth. Fold in 1 tablespoon of the mini chocolate chips. Heat a pan on medium heat and spray with non-stick spray. Spoon 1/4 cup of batter per pancake on the heated skillet. After allowing the pancake to firm slightly, gently place sliced banana and sprinkle other tablespoon of chocolate chips on to the uncooked side of the pancakes. Half way through flip the pancake and cook on the other side.

Top with walnuts and maple syrup! I thought they were so good I ate mine plain!

NOTE: These would be great without chocolate chips too or even with the chips and minus the banana!

    • Its not necessary and would probably still be great. But, the butter extract adds to the pancake flavor (since it doesn’t use actual butter like normal pancakes). And the nutmeg and cinnamon adds to the banana bread. I

    • Hi Joy,

      Thank you for the suggestion. I will be working on my blog overtime and that is definitely one improvement I hope to make. For now, I would suggest just copy and pasting the recipe into a word document so it doesn’t print the whole post🙂

    • The chocolate chips are from, but I get the butter extract from the local market in the baking aisle.
