Healthy Chocolate Chip Cookie Dough Bars

One of my followers on instagram challenged me to re-create one of her favorite guilty pleasures: Chocolate Chip Cookie Dough Bars. Of course the first thing I thought was “Challenge Excepted!” Does anyone else watch How I Met Your Mother? Or is that just me… Anyway, I am BEYOND EXCITED with how these turned out! These are soooo delicious and completely healthy and dairy free! My family and friends approved and even went for seconds (or thirds)!

Healthy Chocolate Chip Cookie Dough Bars

Recipe by: Amy Clevenger,

Makes Approximately 8 Bars

Cookie Dough Layer:

– 2 cups Old Fashioned Oats

– 1/2 cup Baking Stevia

– 1/2 cup Unsweetened Vanilla Almond Milk

– 1/2 teaspoon Better Body Foods Vanilla Extract

– 1/2 teaspoon Butter Extract

– 1/2 tablespoon Honey

– 1/2 cup Enjoy Life Mini Semi Sweet Chocolate Chips (these are dairy, nut and soy free)

Chocolate Layer:

– 1/8 cup Unsweetened Cacao Powder

– 1 tablespoon Better Body Foods Coconut Oil

– 1 tablespoon Peanut Butter

– 2 tablespoon Unsweetened Vanilla Almond Milk

– 1/2 teaspoon Better Body Foods Vanilla Extract

– 1/2 tablespoon Honey


Line a bread loaf pan with plastic wrap. First blend the oats in a food processor or blender until they turn into a flour consistency. Then place all cookie dough ingredients in the food processor EXCEPT the chocolate chips. Blend until smooth. Once ingredients are blended together fold in the chocolate chips. Press the cookie dough in the pan. And place in the refrigerator until done with the chocolate layer.

Place all the chocolate layer ingredients in a food processor or blender and blend until creamy. Using a spatula and spread the chocolate layer over the chilled cookie dough layer. Refrigerate until chocolate layer hardens. Slice and Serve cold.

NOTE: Can make this dessert vegan by using agave nectar in place of the honey.

  1. I don’t know what I did wrong but when I made these the peanut butter out weighed the cacao powder. All I could taste was peanut butter. I’m going to have to make them again!

    • That’s so weird. Did you measure properly? Most people have said they couldn’t even taste the peanut butter. Well, hopefully they still tasted good! Peanut butter isn’t a bad taste to have😉

  2. I’m wondering if there is anything I can use to substitute for the coconut oil? I have everything except that. I know it’s a healthy alternative and I should have some around anyway, but I’m trying to kick this sweet tooth without a dangerous trip to the grocery store! Lol Thanks, this recipe looks great!

    • You could maybe replace it with some more honey. The coconut oil is what helps harden the top layer. But I am sure I would be fine without it.
